Watermelon Salad with Feta & Basil
1 seedless watermelon, room temperature.
4 oz. authentic feta in brine
2-3 tbs. good quality, fruit olive oil
a handful of fresh basil
- Chiffonade the basil (or roughly chop it) and combine basil, feta, and olive oil in a small dish to marinate while you cut the watermelon.
- Cube the watermelon and plate in a shallow bowl.
- Top the watermelon with the basil/feta mixture and serve.
